The basics

What is freeze-dried fruit?

Freeze-dried fruit is fruit that has had almost all of its water removed through a process called freeze-drying (also known as lyophilisation). The fruit is frozen and then placed under vacuum, where the ice turns directly into vapour without passing through a liquid stage. Because no heat is used, the fruit keeps its shape, colour and flavour, and becomes light and crunchy.

How is freeze-dried fruit made?

It's made in three stages. First, fresh fruit is frozen solid. Second, it's placed in a vacuum chamber at very low pressure. Third, through a process called sublimation, the frozen water leaves the fruit as vapour. What remains is the fruit's structure, colour and taste — minus the water. The result is a crunchy snack made from nothing but fruit.

What does "lyophilisation" mean?

Lyophilisation is simply the scientific term for freeze-drying. It describes removing water from a frozen product under vacuum. You'll see it used interchangeably with "freeze-drying" on food and ingredient labels.

Is freeze-dried fruit the same as dried fruit or dehydrated fruit?

No. They all remove water so fruit lasts longer, but the method is different. Dried and dehydrated fruit use heat and air to slowly evaporate water, which makes the fruit chewy and darker. Freeze-drying uses cold and vacuum instead of heat, removing far more water and leaving the fruit light and crunchy, closer to its fresh shape and colour.

What's the difference between freeze-dried and dehydrated fruit?

Dehydrated fruit is dried with warm air over several hours, typically removing around 70–80% of the water. This leaves it chewy and pliable. Freeze-dried fruit is frozen first and dried under vacuum without heat, removing around 98–99% of the water. This makes it crunchy and very light, and it generally keeps more of the fruit's original colour and flavour.

Which is better, freeze-dried or dehydrated fruit?

It depends on what you want. Dehydrated fruit is chewy and often less expensive to produce. Freeze-dried fruit is crunchy, lighter, and tends to retain more of the fruit's natural taste, colour and texture because it isn't exposed to heat. Many people prefer freeze-dried fruit for its clean flavour and satisfying crunch, and because it usually needs no added sugar or oil to taste good.

Does freeze-dried fruit taste different from fresh fruit?

The flavour is intense and concentrated, because the water is gone but the fruit's natural sugars and aromatics remain. Many people describe freeze-dried fruit as tasting more "fruity" than fresh, with an airy crunch instead of a juicy bite. If you prefer a softer texture, you can rehydrate it (see below).

Why does some fruit in the same pack taste tangy while other pieces taste sweet?

Because it's real fruit — and real fruit is never perfectly uniform. In any punnet of fresh strawberries, some berries are riper and sweeter while others are a little tangy or sharp. Freeze-drying captures each piece exactly as it was, so that natural variation carries straight through to the pack. One strawberry might taste candy-sweet and the next pleasantly tart.

We think of this as a feature, not a flaw. That range of flavour is actually proof of what's not in the pack: if we were correcting taste with added sugar or sweeteners, every piece would taste the same. Is freeze-dried fruit healthy?

Freeze-dried fruit is simply fruit with the water removed, and Crunchum products contain no added sugar, oil or preservatives. As with any food, how it fits into a healthy diet depends on your overall eating pattern and portion size. Because the water is gone, freeze-dried fruit is concentrated, so a small handful goes a long way. It can be a convenient way to enjoy fruit flavour as part of a balanced diet.

Does freeze-drying preserve nutrients?

Because freeze-drying uses cold and vacuum rather than heat, it generally offers higher nutrient retention than dried or dehydrated fruit, which are made with heat that can reduce some heat-sensitive vitamins. The exact amount retained varies by fruit, growing conditions and processing. Freeze-dried fruit is not a substitute for a varied diet, but it can be a practical way to include fruit in your day.

Does freeze-dried fruit have added sugar?

Crunchum freeze-dried fruit does not. It is 100% fruit, and the only sugars present are those that occur naturally in the fruit itself. Note that other brands may add sugar or sweeteners, so it's always worth checking the ingredients list.

Is there sugar in freeze-dried fruit?

Yes, but only the fruit's own natural sugars — nothing is added at Crunchum. Because the water has been removed, the natural fruit sugars are more concentrated by weight than in fresh fruit, which is another reason a small serving is satisfying.

Is freeze-dried fruit vegan and gluten-free?

Are there any additives or preservatives?

Is freeze-dried fruit good for kids?

Many parents like freeze-dried fruit as a mess-free, no-added-sugar way to offer fruit flavour. As with any snack for young children, offer age-appropriate portions and supervise eating, since the pieces are light and crunchy. If you have concerns about a specific child's diet, your paediatrician or a dietitian is the best source of advice.

How do you eat freeze-dried fruit?

Straight from the pack is the simplest way — it's a ready-to-eat, crunchy snack. You can also toss it over yogurt, smoothie bowls, oatmeal or cereal; blend it into smoothies and shakes; or crumble it over desserts, ice cream, salads and baked goods.

Can you rehydrate freeze-dried fruit?

Yes. Soak it in water, milk or juice for a couple of minutes and it will soften and take on a texture closer to fresh fruit. This is handy for baking, cooking, or if you simply prefer a softer bite. Left dry, it stays crunchy.

Can you bake or cook with freeze-dried fruit?

Absolutely. It can be crushed into a powder to flavour and colour icings, batters and yogurt, folded whole into muffins and granola, or rehydrated for use in compotes and sauces. Because it's concentrated, a little delivers a lot of fruit flavour.

Storage & shelf life

How should I store freeze-dried fruit?

Keep it in a cool, dry place away from direct sunlight, and reseal the pack tightly after opening. Freeze-dried fruit readily absorbs moisture from the air, so an airtight seal is what keeps it crunchy.

Why did my freeze-dried fruit go soft or chewy?

That's almost always moisture. If the pack is left open or stored somewhere humid, freeze-dried fruit will draw in water from the air and lose its crunch. Always reseal tightly, and store in a dry spot. For best texture, finish an opened pack within a few weeks.
