What Is Freeze-Dried Fruit? (And How It Differs From Dried & Dehydrated Fruit)

What is freeze-drying, in simple terms?

Freeze-drying (also called lyophilisation) removes water from fruit in three stages:

  1. Freezing — The fresh fruit is frozen solid, locking in its structure, colour and nutrients.
  2. Vacuum — The frozen fruit is placed in a vacuum chamber at very low pressure.
  3. Sublimation — The ice turns directly from solid to vapour without ever becoming liquid. The water leaves, but the fruit's shape, cells and flavour stay behind.

Because the fruit is never heated or cooked, it keeps its natural colour, taste and most of its nutrients — and gains a satisfying crunch.

Freeze-dried vs dried vs dehydrated fruit

People often use "dried fruit," "dehydrated fruit" and "freeze-dried fruit" to mean the same thing, but they're made very differently and the results are not the same.

In short: dehydrated and dried fruit use heat, which shrinks the fruit and reduces some nutrients. Freeze-drying uses cold and vacuum, so the fruit keeps more of what made it good in the first place.

Is freeze-dried fruit healthy?

Yes. Freeze-dried fruit is simply fruit with the water removed. Crunchum products contain no added sugar, no oil and no preservatives. Because there's no heat and no additives, you get concentrated fruit — the fibre, the natural fruit sugars, and much of the vitamin and antioxidant content of the fresh version, in a lightweight snack.

Portion note: because the water is gone, freeze-dried fruit is concentrated, so a small handful goes a long way.

Does freeze-dried fruit have added sugar?

No. Crunchum freeze-dried fruit is 100% fruit. The only sugars present are the fruit's own natural sugars — nothing is added.
